Pinterest Recipes I've Tried (And Liked!) Part Two
I'm a total Pinterest gal and I'm sure most are these days. That website is SO addicting! While I love nothing more than browsing page after page of goodies each morning with my coffee, I also get a healthy dose of gilt if I don't actually use some of said pins I'm always curating. Does anyone else get like that? I think it's a good thing as it pushes me to try recipes I continuously seem to pin and breaks me out of my comfort zone of the rotation of typical meals we consume throughout the week. So today I've rounded up some more recipes I've tried lately and given you a little snippet of what I thought about each one.

Cheesy Hashbrown Casserole - This is easily my new favorite thing to make for a weeks worth of breakfasts. It was super easy to assemble and I even added a little bell pepper and breakfast sausage to give it more oomph. It's also the perfect holiday dish to take with you as you can assemble everything the night before and transport it to wherever the next day!
Braised Short Ribs - I LOVE the Pioneer Woman and pretty much anything she cooks, so these short ribs are no exception. We substituted the polenta for rice and it was the perfect lazy Sunday dish.
Slow Cooker Enchilada Quinoa - I'm constantly on the hunt for recipes I can make and take to work for a week. This slow cooker quinoa was the perfect thing and with a little added lettuce and avocado on top made for a weeks worth of delicious lunches!
Ranch Buffalo Chicken Salad - Before making this, I couldn't even remember the last time I had chicken salad. My grandmother used to make it all the time, but somewhere along the way my mind just completely forgot about it. I'm so glad this recipe got me back on track because it was DELICIOUS! And such a great alternative to the regular everyday chicken salad.
Mediterranean Tortellini Salad with Red Wine Vinaigrette - I love tortellini so any chance I get to use it I will. This salad was perfectly light with just a hint of heartiness (cheesy) to get me through the night. It also was super easy to warm back up the next day! I always hate when things don't warm up as great as they were the first time.
